I was born in 1972, so pretty much my entire angst-ridden teenage years were in the '80's. Luckily, there was a lot of layered clothing and interesting dance moves to make us all look ridiculous, which at least meant it was a pretty level playing field.
I think my friends and I watched this movie at least 3,496,398 times. We all had our version of Jake Ryan....mine tragically moved to the US, at the end of year 10, with his mother who worked for NASA. We all have to make our sacrifices in the name of progress....I like to think of it as my contribution to the space programme.
This look was our ultimate goal and one which I was absolutely NOT allowed to follow due to the whole cleavage/could be mistaken for a lady of the night/over my dead body will you leave the house looking like that scenario that my parents created.I chose to wear black t-shirts, kilts and Doc Marten's instead....very ska....but I was covered up and wearing sensible shoes, so they couldn't really object.
Remember when Tom Cruise seemed like a normal (albeit movie star type) person? I miss it.
My "older man" crush.
Still a favourite movie.....my kids watched this recently and said "This is like the coolest movie ever!!"
I got a bit physical for a while....
Until I heard this little-known Irish band on MTV one night singing "Gloria" and I was changed forever....********************************************************
This is my gift to you my '80's loving friends.
A little slice of retro magic that you can break open whenever the mood strikes.
My next eldest brother adores this dip and has said that unless I'm making it, he just won't visit. So, I always think of him when I make this. It's so filling that it's handy to keep in mind when you're hosting a casual get together and you don't want the palaver of an entree. Also, a great ice-breaker if you have a variety of people together who don't know each other particulary well. Once they start eating this, it's game on as people fight their way to the bottom and see who can stack the most dip on one corn chip.
Nachos Sweet Child of Mine Dip
(it's called that because when I eat it, it reminds me of every party I went to in senior school and this song always played....it was the make-out song of choice....not that I ever did Mum, I promise, you were totally right to trust me)
You crack open a can of refried beans and smooth it into the bottom of a casserole dish.(please, for the love of Pete, don't use the salt-reduced version. There is a time and a place for prudence, this is neither)
Take two avocados and smoosh them with a fork, adding a hearty squeeze of lime or lemon (I prefer lime)
Then mix one carton of full-fat sour cream (low-fat is too runny and not at all in the spirit of things) with a packet of Taco seasoning. And spread it all over the avocado.
Then expertly (of course) dice a couple of tomatoes and one spanish onion....or however much you need to cover the sour cream layer.

1 can re-fried beans
2 avocados
1 squeeze of lime or lemon
1 carton of full-fat sour cream
1 packet of taco seasoning
3 roma tomatoes
1 spanish onion
couple of handfuls of shredded tasty cheese.

Oh my gosh, Sixteen Candles, Pretty in Pink, St Elmo's Fire, The Breakfast Club need I go on. Oh dear ... We owe a lot to John Hughes.
ReplyDeleteHey love the Nachos, I'll just pop over and try some cause I'm too lazy to make my own okay ... :)
xoxo
Best dip ever. Thanks for the trip down memory lane.
ReplyDeleteNice to meet you Meredith!
ReplyDelete6 kids - wow! I'm envious.
Born in 1970, I just relived the 80s with you.
Will be making the dip - anything that's not salt-reduced, is full-fat and includes avocado has my vote!
is that a cold thing? Or do you melt the cheese? Must be cold with the avo!? I've never ever come across this before..... I will have to give it a go!
ReplyDeleteLove those movies. So cheesy good!
Love love love this post Meredith!!!!!!!
ReplyDeleteAnd i love this dip too. It's the BEST!!! ROCK ON 80's style!!!
mmmmmmmmm sigh...my mouth actually for real watered. looks soooo good
ReplyDeleteHey, I am liking your blog! Found you on Gail's Blogroll... following you now (I was born in Nov'69 so I am totally with you on the whole teenage 80's thing. What I can't figure out is WHY ON EARTH anyone would want to revive those bad taste fashion mistakes we had to endure!??!)
ReplyDeleteWhat a cool trip down memory lane! Look forward to showing those movies to my kids when they are a little older and enjoying them all over again. Love the dip - I make one regularly that is similar so will give your version a try. Hope you are all well. Leanne
ReplyDeleteBRILLIANT post Meredy, I loved ti....there is something about looking back at the 1980's...maybe it's the distance and knowing that we would never make ourselves look quite that ridiculous these days...hmmmm!
ReplyDeleteTom Selleck....Magnum....oh yeah!! I LOVED him when he came back in Friends as Monica's hot "older" boyfriend, looking sexier than ever :)
And that dip....a friend makes something very similar....she contributed it to the school cookbook and now you can't go to any school event or end of term party without there being at least three of them LOL! Delish :)
PS Loved your Bookacino post.....fabulous....I would give my right arm to be there today :) xoxo
It's all coming back to me now. Though we never had party food as good as that dip looks. I'm just going to play Laura Brannigan's Self-Control and see what I have in the wardrobe that's royal blue and mostly shoulders.
ReplyDeleteHey there...just popped in from Surviving Life's Mundane....those pics brought me right back...loved it! John Hughes was indeed our staple!
ReplyDeletethanks for taking me down memory lane!
Oh yuuuuummmmmmmmmmmmmm
ReplyDeleteah, st elmo's fire. loved it. still love it. we wore the soundtrack tape (yes, tape) out in college. pam
ReplyDeleteOh the 80's, don't do it Meredy!! I made the NSCoMD last night. However I committed a mortal sin - I shoved it under the grill for a few secs. to melt the cheese - it was incredibly good lukewarm. Thank you for the recipe but not for the memories of the big hair & leg warmers.
ReplyDeleteMillie ^_^
